Well I just re-watched that clip, and that's not quite what he said. He said "Adolescent to twelve years old," not "Adolescent-- 12 years old." Meaning that it was just a guess at her age.
Just thought it might be worth noting. She still may be 12, it's just... I don't think it's confirmed anymore. Or rather, it never was.

Actually that's impossible, because while on Lyoko, you only exist as a bunch of code, data, and brainwaves. I suppose technically she aged in wisdom rather than body (because yeah, she would be in her early-mid 20's about now)

I kind of disagree with that. She looked precisely the way she does in "Code: Earth" as she does when she is virtualized in "The Key" with her father. They even used the same outfit from season 1 to emphasize it. Finding herself without any memory and being constantly terrorized by hordes of XANA monsters likely made her the quick-thinking, (though still innocent and mischievous) type character she is now. I don't think she really aged...genetically speaking. Age is caused by mistakes made in the process of creating new DNA and cells...cells and cell structure likely don't exist in the pixel world of Lyoko. Thus age wouldn't really exist either. ^^
